Apple Leaf Pie

Ingredients
Shortcrust pastry
900g cooking Apples
1 tsp ground cinnamon
115g caster sugar, plus extra for sprinkling
3 tbsp plain flour
Lightly beaten Egg with 1 tbsp water
Custard
Method
Peel, core and thinly slice the apples.
Combine the apples with sugar, cinnamon and flour.
Divide the pastry into two halves.
Take one half and roll it out so that it is big enough to cover your pie tin.
Cover the pastry with the apple mixture.
Roll out the other half of the pastry.
Moisten the edge of the bottom layer of pastry and place the second piece on top.
Press down on the pastry edges, making sure that they are properly sealed.
Cut three small holes in the top of the pastry to let out the steam.
Use the pastry trimmings to make decorations, such as leaves, sealing them in place with a little water.
Brush the pastry with the beaten egg, then dredge with caster sugar.
Bake in the centre of the preheated oven for 30 minutes, 200C/ GM6, then reduce the temperature to 180C/Gas Mark 4 and bake for a further 15 minutes or until the pastry is golden and crisp.
Serve with custard.
