Khobz Dzairi…Algerian sweet

 

Today I was invited to a birthday party in London, I had intended to leave home just after lunch but I was running late as I had to put my little boy for his usual afternoon nap first.  I expected to have 1 hr to spare before he woke up and we had to make a move. I wanted to take something with me to the party but only 1 hour what can i make??????.  I thought of this delicious recipe, it’s very easy and quick to make however it’s better to leave it to stand for 2 hrs before cutting it, I didn’t have enough time so I had to cut  big pieces..lol

Ingredients

 

4 eggs

1 cup sugar

1 cup oil

1 cup milk

2 cups medium semolina

2 tbsp flour

2 tsp baking powder

1-2 tbsp grounded almond (Optional)

Lemon zest

Honey

 

 

 

 

 

 

 

 

Method

 

                         In a large bowl mix the eggs, sugar and lemon zest well with an electric

                    blender

                   Add oil and milk, mix well

                    Incorporate in the mixture, semolina, flour and the baking powder

                    Mix well

                    Leave to rest for 10 min

                    Pour the mixture in a well greased tin

                    Bake in a medium oven for 15-20 min or until golden brown

                    Pour honey over the cake

                    Cut in small pieces and decorate with nuts
