Here is as promised the recipe of my mum’s birthday cake. A fruit cake which I should have put some fruit decorations on top of instead of the flowers but I thought it wasn’t appropriate..lol…An original traditional English fruit cake will have to be baked for 4-5 hours and left for days or weeks before decorating it. Of course I didn’t have that much time so this is a quicker version of it. The result was perfect, no difference at all…
100g plain flour
125g wholemeal flour
2 tsp baking powder
100g soft brown sugar
280g mixed dried fruit (I used mixed peel, raisins, glace cherries, dates, apricots)
2 eggs, beaten
3 tbsp Jam
2 tbsp milk
1/2 tsp mixed spice
1 tsp cinnamon
Pinch of salt
In a bowl, Sift the plain flour and salt, then stir in the wholemeal flour, baking powder, mixed spice, cinnamon and sugar.
Add the butter.
Stir in the remaining ingredients and mix well.
Add more milk if the mixture seems too stiff.
Spoon into a greased cake tin or lined one.
Bake in a preheated oven (180 C/ GM4) for about 1 1/2 hours or until a skewer inserted in the centre comes out clean.
Cool on a wire rack.
