Fruit Cake


Here is as promised the recipe of my mum’s birthday cake. A fruit cake which I should have put some fruit decorations on top of instead of the flowers but I thought it wasn’t…An original traditional English fruit cake will have to be baked for 4-5 hours and left for days or weeks before decorating it. Of course I didn’t have that much time so this is a quicker version of it. The result was perfect, no difference at all…




100g plain flour

125g wholemeal flour

2 tsp baking powder

100g soft brown sugar

110g butter

280g mixed dried fruit (I used mixed peel, raisins, glace cherries, dates, apricots)

2 eggs, beaten

3 tbsp Jam

2 tbsp milk

1/2 tsp mixed spice

1 tsp cinnamon

Pinch of salt




In a bowl, Sift the plain flour and salt, then stir in the wholemeal flour, baking powder, mixed spice, cinnamon and sugar.

Add the butter.

Stir in the remaining ingredients and mix well.

Add more milk if the mixture seems too stiff.

Spoon into a greased cake tin or lined one.

Bake in a preheated oven (180 C/ GM4) for about 1 1/2 hours or until a skewer inserted in the centre comes out clean.

Cool on a wire rack.

tout d' abord je vous remerci de vos bonne recettes qu' elle ouvre apetit
je voudrais faire une remarque par rapport au moule de l' etoile {helwet etabe3}, ce moule que vous utilisez est l' etoile des juifs 6 coins (hram), par contre une etoile normale a 5 coins,
merci de prendre ma remarque en consideration

j'ai achete ce taba3 a Alger ou tous le monde l'utilise labas,,je n'ai jamais fais attention ou fais la difference entre les etoiles,,lol...mais je prenderai ta remarque en consideration et je
compterai les coins ...merci..
